Piña Colada!!

Hello everyone! This warmer weather inspired me to make piña colada cupcakes! I wanted to get my cake moist and I've heard sour cream will do the trick. So I took this opportunity to try it out. This recipe called for vegetable oil and sour cream and the results: amazing!

The cupcakes are pineapple cupcakes, complete with crushed pineapple. The icing is a coconut cream cheese icing. I love this simple combination of the sweet pineapple cake and the smooth cream cheese coconut on top. Separately, these two might come off strong but together, they're magnificent.

While the cake is moist and incredible, I am picky about textures. The crushed pineapple isn't my favorite to bite into. I'd like to know what you all think. Do you like to bite into fruit or nuts in a cake? Or do you prefer plain, fluffy cake?
